Traditional ceviche is made with raw shrimp, I cook my shrimp. Either way is just as delicious as the other.
Ingredients:
1 lb raw or cooked Shrimp
1 large Tomato or 1 pint cherry Tomatoes
1-2 Avocados
1 diced Jalapeno
3 tbsp chopped Cilantro
1 Lime
1/2-1 red Onion
1 tbsp Olive oil
pink Himalayan sea salt
Ready to Eat?:
- Peel , de-vein, and clean shrimp(if not already). In a large skillet with olive oil, on medium heat, cook shrimp until fully cooked(light pink). Let cool. Then cut shrimp in half, if large enough to do so.
- Dice tomatoes, cilantro, jalapeno, avocados, and red onion.
- In a large bowl mix all diced ingredients and shrimp.
- Juice the lime over mixture, season with salt
Tidbits:
- With any seafood, choose WILD CAUGHT. Farm raised fish is generally full of contaminants , feces being one of them.
- Any fish labeled “Alaskan” will always be WILD CAUGHT and cannot be FARMED.
- Black beans are a good addition to this dish, as well.
