Quinoa Mac n Cheese

Ingredients:

 1 head Broccoli crowns

1 cup Quinoa

1 cup Nutritional Yeast

6 tbsp almond flour

2 tbsp Garlic powder

 2 tbsp Dijon mustard

2 cups Almond milk

 salt/pepper

Get Cooking:

  1. Cook quinoa according to package. Steam broccoli crowns.
  2. In a small sauce pan combine almond milk, nutritional yeast, flour, garlic powder and Dijon mustard. Cook on medium heat, whisk and cook until thickens. Add more flour to thicken, if necessary.
  3. Add steamed broccoli to quinoa, pour cheese mixture on top, season with salt and pepper, stir to coat.

Tidbits:

  • I always cook my quinoa in stock, today I used veggie stock. It’s also important to rinse the quinoa before cooking.
  • Adjust the almond flour, you may need to add more to create a creamy consistency.
