Quinoa Mac n Cheese
Ingredients:
1 head Broccoli crowns
1 cup Quinoa
1 cup Nutritional Yeast
6 tbsp almond flour
2 tbsp Garlic powder
2 tbsp Dijon mustard
2 cups Almond milk
salt/pepper
Get Cooking:
- Cook quinoa according to package. Steam broccoli crowns.
- In a small sauce pan combine almond milk, nutritional yeast, flour, garlic powder and Dijon mustard. Cook on medium heat, whisk and cook until thickens. Add more flour to thicken, if necessary.
- Add steamed broccoli to quinoa, pour cheese mixture on top, season with salt and pepper, stir to coat.

Tidbits:
- I always cook my quinoa in stock, today I used veggie stock. It’s also important to rinse the quinoa before cooking.
- Adjust the almond flour, you may need to add more to create a creamy consistency.
