1lb Ground Chicken
1 Cage Free Egg
1/2 c Quick or Old Fashioned Dry Oats
3 tbsp Red Onion
2 tbsp Minced Garlic
1/2 tsp Parsley
1/2 tsp Onion Powder
1/3 c Feta Cheese
Pink Himalayan Sea Salt/Pepper
Buffalo Sauce
1 c Franks Red Hot Sauce
1 tbsp Coconut Oil
How to Make Some Balls:
- Line a baking sheet with parchment paper. Preheat oven 375*
- In a mixing bowl, combine all ingredients, minus the hot sauce and coconut oil.
- Using an ice cream scoop or your hands, create golf-size balls and place on lined baking sheet.
- Bake balls for 10 mins, then turn meatballs over and cook for another 5 mins.
- In a large skillet, heat hot sauce and coconut oil on low-medium heat. Place meatballs in skillet, coat with sauce, simmer for 5 mins.
- Enjoy your buffalo balls!
Tidbits:
- Blue cheese or gorgonzola cheese would be a delicious addition.
- When creating meatballs, keep a cup of warm water handy. The meatballs start to stick to your hands, dipping your fingers in water will help them from sticking to your hands.
- Parchment paper works better than foil, but be careful-if you cook for too long it can catch fire!
