Broc- Tots

Ingredients:

1 Head  Broccoli

1 Large Egg

1/4 c Diced Yellow Onion

1/3 Shredded Monterrey Jack Cheese

2/3 c Italian Panko Breadcrumbs

Pink Himalayan Sea Salt/ Fresh Cracked Pepper

 

Make Tots:

  1. Preheat oven to 400*, line a baking sheet with parchment paper or “grease” your baking sheet. Fill a pot with water and bring to a boil.
  2. Cut broccoli, keeping mostly the florets. Add to pot of boiling water, cook for 2 minutes, then remove and run under cold water for about 15-30 seconds. Drain well.
  3. Finely chop the broccoli, then add to a mixing bowl with remaining ingredients.
  4. Using a large spoon, ice cream scoop or your hands, scoop mixture in hands and create a ball and then start to mold into tater tot shape.
  5. Place on baking sheet,bake until golden brown, about 20-25 minutes, turning half way.

Tidbits:

  • Cheddar cheese is a great option.
  • If your texture seems dry, add another egg. I started with one egg and ended up adding another. It depends on how big of a head of broccoli you have.
  • Try and trim off as much stem as possible, unless you are using a food processor. It’s hard to finely chop the stems, they make it a little harder to form your tots.
  • I recommend using the food processor, it would take less time and more finely chop.
