Spring Sprout Orzo Salad

Ingredients:

1 c Cooked Organic Orzo

1 Yellow Bell Pepper, Diced

1/2 Red Onion, Diced

1/4 c Fat Free Feta

1/2 c Shaved Brussel Sprouts

3 tbsp Fresh, Chopped Parsley

3 tbsp Extra Virgin Olive Oil (EVOO)

1 Fresh Squeezed Lemon

Pink Himalayan Sea Salt/Fresh Cracked Black Pepper

 

Let’s Get Sprouted:

  1. Cook orzo according to package.Let cool.
  2. Dice pepper, onion, and sprouts(if whole). Chop Parsley.
  3. In a medium sized bowl, mix all ingredients, drizzle with EVOO and lemon juice. Season with salt and pepper.

Tidbits:

  • Trader Joe’s sells shaved brussel sprouts, much more convenient than chopping your own sprouts, You could always throw them in a food processor though.
  • Add more EVOO if you find the orzo too dry, or add more lemon.
  • Lemon zest is a great option to add.

Skinny Thighs

Ingredients:

6 Boneless, Skinless Chicken Thighs

1/4 C Whole Wheat Flour

1 Tsp Paprika

1/4 C Raw Honey

2 Tbsp Soy Sauce or Braggs Liquid Aminos

4 Garlic Cloves, minced

1 Tsp Red Pepper Flakes

Pink Himalayan Sea Salt/Fresh Cracked Black Pepper

 

Into the Oven:

  1. Preheat oven to 375*
  2. In a medium sized bowl, mix together flour, paprika, salt and pepper
  3. Coat each chicken thigh in the flour mixture and place in a greased or foil lined dish
  4. In a separate bowl, mix the honey, soy sauce and garlic
  5. Pour honey mixture evenly over thighs, coat both sides completely. Sprinkle with red pepper flakes for an extra kick
  6. Cover with foil and bake for 30 minutes
  7. Uncover and continue baking for another 15 minutes

Voila!

An Apple A Day…

Apple Cider Vinegar

The saying goes, “an apple a day keeps the doctor away.” Knowing what I know today, I believe that still stands true, but best in liquid form. I am talking specifically, about Braggs Organic, Raw, Unfiltered, with the ‘Mother’ Apple Cider Vinegar. The magnitude of nutritional benefits that cider yields is unparalleled. Uses ranging from health and beauty to an all natural house cleaning solution.

When I was about 12 years old, a fungal/bacterial rash developed around my hairline. My mom brought me to the dermatologist and with a simple shampoo prescription, that was to be used as part of a daily regimen, the rash disappeared over time. However, we never found out the etiology for the rash and it never really came back until I got older. I started reading about ACV(apple cider vinegar) and one of the uses was a hair rinse- ACV balances the scalps PH level. Our bodies contain PH levels which are composed of acidity and alkalinity. When our PH levels are off balanced, diseases and illnesses become susceptible especially, cancers. In my case, I attribute it to not washing my hair everyday after sweaty workout sessions and for the simple fact, I hate washing my long locks. It literally makes my shower an extra 15, sometimes 20, minutes longer than usual when I have to wash it. Eventually, I started to notice the rash coming back and my scalp getting itchy and dry. I came across a solution for ACV; ACV, water, raw honey and lavender. Mix in a spray bottle, spray onto the scalp, leave on scalp for 20-30 minutes and then rinse. After a couple of treatments the rash disappears, my hair is clean, shiny and smells like lavender. I found my own natural treatment without the use of harsh chemicals and ingredients. This is just one example of the various ways to utilize this elixir.

Many people suffer from acid reflux or heartburn or indigestion, are you one of them? I’m here to tell you ACV will help treat them ALL! My boyfriend suffered from acid re-flux for years and for years, his doctor prescribed him Prilosec. He still suffered and was never cured, the meds just masked the symptoms and that’s if you remembered to take it before you had a meal. With the use of taking ACV before each meal, his acid reflux disappeared. You wouldn’t think to take an acid to treat an acid, but in this case it counter-reacts with the acid in the stomach. Try to take ACV before each meal and see if you notice your symptoms dissipate. You can dilute it with water or take it by the spoonful. I happen to like the taste of vinegar and drink it straight 3 times a day. I used to douse my corned beef and cabbage with vinegar when I was younger, drinking it straight doesn’t bother me. I do not, nor did I ever suffer from any of these conditions, but I do take ACV to aid in digestion and boost my energy. Sometimes I add it to my tea, my lemon water, use it as salad dressing, there are just so many uses for it. Super Seedz

I remember carving pumpkins with my mom for Halloween when I was younger. Using a stenciled design and a pumpkin carving tool kit, I loved poking holes through the flesh of that pumpkin. That was the fun part. The not so fun part was scooping out the insides; seeds and lots of slimy pulp. We never wasted the seeds though, my mom would roast them with just a little bit of salt. I thought it was weird, she loved them. Come to think of it, she could have been the seed queen!

I actually know the seed queen and it’s not my mom, her name is Kathie Pelliccio. She is the founder of SuperSeedz, a CT based company that produces a variety of gourmet pumpkin seeds. I, officially, met her and her husband, Joe, at Shoreline’s Wine Festival held annually at Bishop’s Orchard in Branford, CT. Their faces were familiar to me, I had seen them at my local gym on a regular basis. Little did I know they made delicious seeds, locally. A conversation later and a bulk purchase of seedz, a friendship was created. This year I ran into them again at a different festival, the Green Festival in New York at the Javits Center. I was so happy to see them! From CT to NY promoting their SuperSeedz, I was proud to be from CT. Seeing them inspired me to keep thriving to get my name out there. I recently discovered coconut bites. They are coconut flakes with chia seeds, sunflower seeds and pumpkin seeds. They are amazingly delicious! Any way you can get your seeds, whether its baked or in a salad, do it!

My 7 Chakra Stones

The point of this blog is share with you, not only about healthy eating, but overall health. I eat clean because I know I am supplying my body with the ideal nutrients to sustain an internal sanctuary. What I don’t know is, all the other practices there are to achieve optimal health. With that being said, my goal is to experience something new, as often as possible, learn as much as possible and inspire as much as possible. The intent is to entice you into trying something I have shared, or plant the seed for you to venture out to a new experience that you would never have given thought to. Some of the things I have planned, I never would have thought I would do willingly with enthusiasm and eagerness.

First Seed: Exploring Chakra Stones. I knew close to nothing about this practice. All I knew was we have chakras and that they are correlated to meditation. Unknown purpose and meaning to me, up until this point. I attended a workshop at this charming boutique  called, Pious Bird. It sold a variety of local artistry pieces/jewelry, assorted stones and vintage furniture. An old school type writer was a display item surrounded by handmade soy candles. It was just a chill, cozy, little store. Upon my arrival, a circle of 10 pillows were spread out on the floor surrounding a wooden table with assorted stones separated into bowls. Honestly, the first thing that came to mind was “light as a feather, stiff as a board.” However, my experience was nothing like that, it was spiritual not Wiccan. Keep in mind, I have never been a part of anything like this and went in with no expectations but you can imagine what I was thinking when I was told to pick a shiny, red stone out of one of the bowls being passed around, and was advised to pick the stone that “spoke” to me, this was the stone I was destined to pick. After picking out a Jasper stone, I was read the purpose and intent of this stone, and how to utilize it to its potential to strengthen the root chakra, chakra #1 out of 7. In a group circle full of 9 strangers, I was about to meditate for the first time in my life holding a stone in my left hand while channeling my root chakra. 1 thing about me is that I don’t know how to relax. As much as I love massages and facials, it takes me about 20 minutes in- to relax so ,meditation seemed nearly unimaginable. Luckily for me, it was a short meditation and the host, Desiree, verbally guided the meditation. During meditation I actually felt grounded, just as it was described being in comparison to roots from a tree. I’m pretty sure that means i was meditating.

The remaining chakras were explained and we picked out 6 more stones, each coinciding with each different chakra. Lastly, we had an 11 minute meditation. This seemed like it was going to feel like a half an hour, based on my incompetence to just relax. Well, I definitely didn’t meditate for 11 minutes, maybe 6 minutes, BUT that was 6 minutes more than I had done, ever. It opened up, thinking about it now, my third eye chakra? I became attracted to the idea of inner peace and focusing on your well-being, it is a mind and body experience. The heart chakra is actually “the bridge” between the upper and lower chakras, connecting body and mind. Also, something I didn’t know 11 minutes ago.

I tried something new, out of my element, open-minded, and enjoyed the whole experience. After this event, I was told we have drop in meditation classes at work every Friday during lunch. Coincidence that I first heard of it right after my first meditation experience? I don’t know but I’m going to go. We all just need to relax, I’m going to work on it…during lunch, at work.

Superfood Apple Muffs

Ingredients:

1/3 & 1/3 cup of Oats(steel-cut, rolled, instant)

2 tsp Baking Powder

1 tsp Baking Soda

1/2 tsp Pink Himalayan Sea Salt

1/2 tbsp Organic Cinnamon

2 Free Range, Organic Eggs

2 tbsp Raw Honey

2 Very Ripe Organic Bananas, Mashed

1 c Chopped Apples(any apple)

1 c Chopped Walnuts or Pecans

1 tbsp Chia Seeds

1 tbsp Ground Flax

Mix It Up:

  1. Preheat oven to 400*. Line a muffin tin with liners or grease with coconut oil.
  2. Pulse 1/3 c oats in a food processor until it becomes flour-like.
  3. Combine the oat flour, 1/2 cup remaining oats, baking powder, baking soda, chia seeds, ground flax,salt & cinnamon in a medium bowl.
  4. In a large bowl, mix eggs, honey and mashed bananas. Add dry ingredients to banana mixture; stir until combined. Fold in apple s and nuts.
  5. Fill muffin tins evenly and garnish with additional slices and walnuts(optional)
  6. Bake for 18-20 mins or until baked through. Let cool and enjoy!

Tidbits:

  • I prefer granny smith apples, but any of your favorite apples will work well.
  • For an extra boost of protein, add a teaspoon of peanut butter as a frosting.
  • Silicone muffins pans work wonders for any kind of baking.
  • Coconut flakes make a delicious topping, also.

Cha Cha Cha Chia

Remember Chia Pets when we were younger? Who would’ve thought, 15 plus years later, I would be eating those same seeds. Yes, they are the same seeds! As a kid I didn’t even know chia was a seed, now its a staple in my day to day routine. It has various uses; baking, make pudding, sprinkle as a topping, add to smoothies or yogurt and many more other ways. I will share some of my favorite ways to use of the chia seed.

The chia seed is a species of a flowering plant in the mint family, native to Mexico and Guatemala. The seed itself is loaded with omega 3 fatty acids, making them one of the richest plant-based sources of these fatty acids, aka the good fat.  It contains 1/3 of the daily recommended intake of fiber, 10 grams in 2 teaspoons. They are also naturally gluten free AND can be used as an egg replacement! Just mix with water and let sit for 15 minutes. It is believed that the Aztecs used chia as a source of energy, they were known as the “Indian Running Food” because runners and warriors would use them for sustenance  while running long distances or during battle.

The most beneficial way of a chia seed is through liquid absorption. Hydrophilic properties allow the seeds to absorb up to TWELVE times their weight in water, creating a gelatinous form. Thus, making it ideal to make pudding. I have, personally, used chia seeds baked into apple muffins, used in my overnight oats, sprinkled on my avocado toast, tossed in a grain salad, energy balls, and those are just to name a few. I hope this inspires you to find your own use for this nutritious little seedling, and then you have to share it with me so I can try it.

Matcha Chia Pudding:

1 cup Almondmilk or Cashewmilk

1/3 c Chia Seeds

1 tbsp Raw Honey

1 tsp Matcha Powder

1 tsp Vanilla Extract

optional toppings: unsweetened shredded coconut, raspberries, chocolate chips(my fave)

Make Your Chia Pet:

  1. In an individual air-tight container or mason jar, combine the chia seeds and matcha and stir together.
  2. Add in vanilla extract, honey, and  Almondmilk or Cashewmilk. Blend and stir to combine. (If you prefer it a little sweeter, you could add another tablespoon of honey or try maple syrup – I wont tell anyone!)
  3. Place in the refrigerator overnight, or for at least 5-6 hours, to allow the chia seeds to get all gelatinous.
  4. When you’re ready to eat, just grab from the fridge and you’re good to go.

Ancient Grains

Many of you maybe familiar with quinoa, but have you heard about Einkorn?  The first thing that pops in my head is “Einhorn is Finkle! Finkle is Einhorn! Einhorn is a man!” from Ace Ventura. Einkorn is not a man however, it is a grain that has been around as long mankind, Einkorn was first cultivated 5,000 to 10,000 years ago. It is also referred to as a type of Farro, along with Spelt. Einkorn is a nutritious wheat with a high content of protein, phosphorous, vitamin B6 and potassium when compared to modern forms of wheat. It also has plenty of carotenoids – the natural red, yellow or orange pigments that are found in many vegetables and fruits, and in a few grains. Carotenoids have the medical properties that help in preventing serious diseases such as cancer. 100 grams of quinoa, which is known for its high content of protein, produces 13 grams of protein while einkorn produces 18 grams of protein.

So what do you do with einkorn? I will share with you what I did with this nutrient packed grain:

Tahini Einkorn Salad:

1 c of Einkorn

2 c Chicken Stock

1 Zucchini

Handful of San Marzano Plum Tomatoes

1 c Fresh Spinach

1/8 c Feta

1 tbsp Chia Seeds

1 tbsp Tahini

2 tbsp Filtered Water

1 Fresh Squeezed Lemon

1 tbsp EVOO

Pink Himalayan Sea Salt/Fresh Cracked Pepper

Mix It Up:

  1. Cook the einkorn according to package using chicken stock, season with salt.
  2. Quarter dice zucchini, half tomatoes, chop fresh spinach and mix with cooked, cooled einkorn. Sprinkle feta and chia seeds, stir mixture. Season with salt and pepper.
  3. In a small bowl whisk tahini, lemon, water and evoo. Pour over einkorn mixture,serve and enjoy!

The clean eating community that produces clean products, is very small in comparison to the big food companies. I want to dedicate a portion of my blog to clean products that I support, and that stand behind producing a transparent label, and are producing REAL food. The first company I want to share with all of you is, Hampton Creek. Hampton Creek Foods, is a food technology company dedicated to producing plant-based products. The first product they introduced was an eggs free egg replacement using pea protein! They currently produce Just Mayo, Just Cookie Dough, and Just Cookies, without real eggs. Just Mayo is  a staple in my fridge, plain and more recently, chipotle! I love chipotle ANYTHING! In addition to support to/from companies, I have received an overwhelming amount of support from my peers. One in particular, Melly P – A dream chaser herself and a huge part of my life, my blog, and most recently, my gym partner. She was one of the people who told me to start blogging. I recently told her I need a blog log for all of my thoughts on the go, and the next time I saw her she had a 3 pack of blog logs for me and my first piece of fan mail!  She supercedes the definition of friend. It is so important to support your friends, family and loved ones, it really keeps them motivated. Companies work the same way, when you support a small company, you are funding them to keep producing. When you encourage your friends, you are funding their drive to keep going.
