Ingredients:
1 C Quinoa, Rinsed
2 C Chicken Broth
1 Red Bell Pepper, Diced
1/2 Shallot, Minced
1 Can Chick Peas, Rinsed
1/4 C Fat Free Feta
1 Lemon, Juiced
2 Tbsp Tahini
1 Garlic Clove, Minced
2 Tbsp Water
2 Tbsp Olive Oil
Pink Himalayan Sea Salt/Fresh Cracked Peppercorn
Mix It Up:
1. Cook quinoa and chicken stock according to package. Fluff with fork.
2. Once cooled, add diced pepper, shallot, chick peas, and feta.
3. Whisk lemon juice, tahini, water, garlic and olive oil. Season with salt and pepper.
4. Coat the quinoa mixture with tahini dressing.
5. Serve chilled.
